If going aftermarket - go grade 8 on everything. The IH bolt torque specs are actually higher than grade 8 (using head bolts at 45 ft-lbs as an example) but you should be OK with grade 8. Grade 5 or 3 will get you into trouble.

Correct on the grade. 45 lbs on the head bolts is on the hairy edge of grade 8. McMaster sells a grade 9 bolt with a heavy hex head. They need to be trimmed to length but the extra tensile is good insurance. You want to trim head bolts to the proper length, otherwise threads will protrude into the coolant chamber. When they rust, you may as well have a welded nut on there when it comes to removing the head sometime in the future.
