In search of . . .

I'm looking for a good banana cake recipe. Not banana bread! I have a great cake that calls for a boxed banana cake mix but they are getting hard to find now. Seems folks aren't baking as much as they used to.

Anyway, please let me know what y'all have and I'll do some test baking and share the final recipe.

Banana Spice Cake

Source of recipe is from Crisco's Favorite Family Foods Cookbook, 1973.

2 1/2 Cups sifted cake flower
1 1/4 cups sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
2/3 cup Crisco
2/3 cup mashed banana
1/3 cup molasses
3 eggs
1/2 cup milk

In mixer bowl, combine flour, sugar, baking powder, soda, salt, spices, Crisco, banana and molasses. Mix vigorously 2 minutes by hand or at medium speed of electic mixer. Add eggs and milk; beat 2 minutes more. Pour batter into 2 greased and floured 9x1 1/2-inch round layer pans. Bake at 350 deg for 35 to 40 minutes.



Comments: I also have a zucchini cake recipe and a potato cake recipe. Same basic recipe except that it uses honey instead of sugar and molasses. The spices are changed or eliminated. Nuts added or not.

Go ahead and post the other 2 recipes. There will be a huge crop of zucchini and potatos to harvest before we know it.
