Hi, Fury. Here's my wife's recipe. I really, really, really like it alot.

Chris' Pineapple Upsidedown Cake
2 cups flour
1/2 tsp. salt
2 1/2 tsp. baking powder
1/3 cup melted butter
1/2 cup milk
1/2 cup pineapple juice from drained fruit
2 tsp. vanilla
1 egg
1 cup white sugar
1 cup dark brown sugar
1 large can sliced pineapple rings, drained
1 large can crushed pineapple, drained
1 small jar maraschino cherries

Mix dry ingredients-flour, salt, baking powder, white sugar.
Mix liquid ingredients-1/3 cup melted butter, milk, pineapple juice, vanilla and egg.

In a 12" X 12" electric frying pan, melt stick of butter and brown sugar. Drop drained crushed pineapple in melted butter and sugar. Place nine pineapple rings over the crushed pineapple in a 3 by 3 pattern. Put a cherry in every hole and space. Mix wet ingredients with the dry and pour batter over all. Cover and cook on 250 degrees for 15-20 minutes or until a knife comes out clean. Turn cake out immediately on a large flat plate. Put on the coffee and eat a great big piece.

Hope you like it as much as I do.
Scott
