Tex-Mex Pulled Pork

OK... I am neither from Texas, nor from Mexico, nor have I ever been there, so I don't know if this stuff tastes like something that you would get down there... I can say, however that this stuff is WONDERFUL on your favorite crusty roll as a sandwich! Nice Crock Pot recipe to make while you are workin on your cub on a Saturday afternoon. COMFORT FOOD!

Ingredients

2.5 lb Well trimmed boneless pork loin roast
1 can (8oz) tomato Sauce
1 cup Bottled BBQ Sauce
1 medium onion, thinly sliced (NOT diced)
2 cans (4.5 oz) Diced Green Chilies
1/4 cup chili powder
1 tsp each of ground cumin and dried oregano
1/4 tsp ground cinnamon
1/2 cup Cilantro, chopped

Directions

Mix sauce (everything except cilantro) ingredients in a 3 quart or larger slow cooker or crock pot.
Add Pork roast whole.
Spoon sauce over roast just to cover
Cover and cook on high 3.5 hours or on low 8-10 hours or until pork is fork-tender.
Remove pork to a cutting board and, using two forks, pull meat into shreds.
Pour sauce into serving bowl.
Stir in cilantro and shredded pork

Serves 8
265 calories per servings
32 g. protein
9g fat.

Mike: Sounds amazing - gotta try that one. In this house, it'll serve 1 - 8 times.....or perhaps less !!! Perfect ! C
