White Divinity

This is one of my favorite Christmas Holiday Treats "White Divinity"
It is fairly easy to make and weather conditions don't have an effect on it's outcome! So here it is
White Divinity
1. 2 ½ cups of sugar
2. ¼ cup corn syrup
3. ½ cup water
4. 2 large egg whites
5. 1 tsp. vanilla extract
6. 10 oz. or more of chopped pecans
Step 1> Mix ingredients 1, 2 & 3 together in cooking pot, then heat at
medium temp stirring ingredients until dissolved, continue to
heat until temp reaches 260*f using a candy thermometer.
Step2> Have eggs beat stiff as step 1 reaches 260*f.
Pour step 1 into step 2 mixing ingredients together slowly
with blender set on whip, and then add vanilla extract.
Continue to whip until texture appears glossy, then fold in nuts
mixing well with a large spoon.
Step3> When ingredients began to stiffen, dip onto wax paper with spoon,
making golf ball size candy.
p.s. Have all ingredients pre-measured and set aside before cooking!!!
