Chocolate Strawberry Shortcake

Chocolate Shortcake

3 squares (1 ounce each) Unsweetened Chocolate
1/2 cup Water
1 cup Sour Cream

1 2/3 cups flour
1 1/2 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
2/3 cup Butter
2/3 cup firmly packed light Brown Sugar
1 cup Sugar
3 Eggs
2 teaspoons Vanilla Extract

Melt chocolate in water in a saucepan over very low heat, stirring constantly until smooth.

Mix flour, baking powder, baking soda, and salt in a small bowl. In a mixing bowl, cream butter and sugars; beat until light and fluffy. Add eggs, one at a time, beating thoroughly after each. Alternately add flour and chocolate mixtures, beating after each addition until smooth. Stir in vanilla.

Pour batter evenly into 2 well-greased and floured 9 inch round cake pans. Bake at 350 degrees F for 35 to 40 minutes, or until cake tests done. Cool in pans for 10 minutes. Remove from pans and finish cooling on racks.

Chocolate Glaze

3 squares Semi-Sweet
3 Tablespoons Water
1 Tablespoon Butter
1 cup sifted Powdered Sugar
dash Salt
1/2 teaspoon Vanilla Extract

Place chocolate, water and butter in a saucepan. Stir constantly over very low heat until mixture is smooth. Remove from heat. Add salt and stir. Gradually add the sugar and the vanilla. Cool. It will thicken as it cools. (If it gets too thick add a small amount of water and stir it up.)

Partially dip 5 large fresh Strawberries into chocolate glaze and set aside for garnish.

Sugar Glazed Strawberries

1 quart fresh Strawberries
2 Tablespoons Sugar
1 teaspoon Vanilla Extract

Hull and halve a quart of strawberries, add sugar and vanilla; mix gently.

Whipped Cream

1 3/4 cups Heavy Cream
3 Tablespoons Sugar
3/4 teaspoon Vanilla Extract

Whip cream with sugar and vanilla until soft peaks form.

Place one cake layer on a serving plate. Spoon on half of the glazed strawberries. Drizzle with half of the chocolate glaze, top with half of the whipped cream. Put second layer on top, spoon the rest of the glazed strawberries on, drizzle the rest of the chocolate glaze on, and top with the rest of the whipped cream. Garnish with the chocolate-dipped Strawberries.
