Egg, Bacon and Toast Casserole - YUMMMYYYY!!!

Hey there all!! I posted this picture on Facebook this morning as the casserole was coming out of the oven for Christmas Brunch

This has been a family tradition for Christmas and Easter ever since I can remember. I hope you all enjoy it as much as we do in my house!

4 cups crouton cubes (We like to use a nice Italian cubes...not the LARGE chunky croutons...the old fashioned kind)
2 cups shredded cheddar cheese (I like sharp)
8 slightly beaten eggs
4 cups milk
1 tsp. salt
1/4 tsp Onion Powder
dash of pepper
3/4 pounds bacon.

Fry bacon until crispy. Drain and pat dry. Crumble bacon and reserve
In bottom of a greased 9 x 13 pan, place croutons and cheddar cheese.
Combine rest of ingredients except bacon. Pour over crouton mixture in casserole 9 x 13 pan.
Sprinkle bacon over top of casserole.
Bake in 325 degree oven for 55 to 60 minutes or until eggs are set.

Makes 12 servings

Mike,

My wife fixed some for breakfast this morning. Since it is just the two of us, she halfed the recipe and it still made enough for us. It is good. Thanks for the recipe.
