Do any of you have a quick easy muffin receipt that can be used for several flavors of muffins? Something that is a plane starter so I can add blue Berrys or choc. chips or other berries?
Will something like this work?
2 C flower
2 eggs
2T oil
1 C Milk
4t baking powder
1/3 C sugar
Than add any fruit or other things you want to give the taste?
Just looking for Ideas now that I am playing Mr. Mom.

You will want to watch not too much liquid according to what you are adding. Choc chips are dry Black berrys are wet and raisens soak up liquid.

This is a really nice recipe. Try it as is for the first time and then if you want you can change fats if you choose. This recipe will give you 3 doz muffins.
Plain Muffins
3 1/2 cups granulated sugar (can mix half sugar/half Splenda)
1 lb butter
8 eggs
6 cups all purpose flour
3 tablespoon Baking powder
1 teaspoon salt
284 ml milk
Cream together at medium speed sugar and butter until double volume (creaming method), combine eggs 2 at a time. Mix together in seperate bowl flour, baking powder and salt and then combine with cream mixture alternately with milk.
Be careful not to over mix blueberries into the paste as they will discolour. It is recommended that you use your hands.
Over mixing will create tunneling in the muffin and make it tough.
Use No 18 scoop and portion into pre-lined or greased muffin pans. Baking temperature 350 degrees.
Variations
Blueberry - 1 lbs. dusted with flour and fold into mixture
Pina Colada -
