Last week, Janie added a new wrinkle to fried potatoes. Someone had suggested that she cut up squash and onions and mix with potatoes when frying. I believe that the squash and potatoes were mixed and after cooking for some time an onion, cut into small sections, was added to the mixture. We find that to be very tasty. Try it. Dan

Potato Patties. My grandparents made potato patties from left over mashed potatoes. They added a bit of milk to the potatoes, formed into patties, dredged in a bit of flour then fried to a crispy golden brown in a skillet.
Really great with ketchup.

Hi Pete: Janie wasn't here when I did the original post. She tells me that if you add a little corn meal to the vegetables before frying the end product will be a little crisper and have a better taste. Hope you like them. Dan

My Grandma fried some potatoes with okra. They were great.
The potato patties we always called tater cakes. I love them too!!
