Here's the recipe for Squash Rolls.
1 envelope active dry yeast
2 cups cooked, mashed winter squash
1 cup sugar
1 Tablespoon salt
1/2 cup butter or vegetable shortening
6 1/2 to 7 1/2 cups flour
Dissolve the yeast in 1 cup lukewarm water. Stir in the squash, sugar, salt and butter or shortening. Add the flour a cup at at time, mixing well after each addition.
Place the dough in a greased bowl, turn to grease the dough on all sides, cover with a tea towel, and set aside to rise until doubled in bulk. Punch down the dough, form into small balls, and place on a baking sheet. Let rise again until doubled in bulk. Preheat oven to 350 degrees.
Bake 30 to 45 minutes, or until browned and hollow-sounding when tapped. Remove rolls from pan and let cool on rack. Makes 3 dozen.
