Chuck Wagon Beans

Now that cold weather has arrived, here is something that will go good on the cold days.

1 gal. Ranch Style beans
2 1/2 lb. ground beef (can substitute sausage)
2 lbs. chopped onions
1/2 cup brown sugar
1/2 cup molasses or cane syrup
1 pint BBQ sauce
2 med. bell peppers (chopped)
1/3 cup yellow mustard
1 can beer
2 oz. worcestershire sauce
2 oz terriyaki sauce
1 tablespoon garlic powder
1 lb. bacon (fried)

Fry bacon and set aside to cool and crumble
Brown onions, peppers, and ground meat. Drain.
In a large stock pot, add all other ingredients.
Add meat mixture to the stock pot, bring to a boil, and cook about 10 min.

Will make a large stock pot full. Any left over can be frozen, and eaten later.

A pan of Mexican corn bread goes good with it too.

Billy,

That sounds delicious and I will have to try it. One question, do you sprinkle the bacon bits over the beans or add the bits to the mixture at the end of cooking? Pete

Pete,

Add the bacon pieces to the mix while cooking. Don't cook the bacon it till it is crisp like bacon salad toppers. Just cook it like you were going to have it for breakfast. Cut it up and dump in the mix.

The mexican cornbread recipe is on the way.

Billy - that is a most interesting dish. I will definately be making that. My buddies and I are going camping in the next day or two, I'm thinking this would be an awesome meal on a cold night! I might have trouble on the beer part though :roll:

Andrew, since the alcohol in the beer evaporates off quickly during cooking, anyway, perhaps you could use a NA beer in the recipe.

Andrew,

The beer is mostly for the liquid part. You could add plain water. As the beans set, they will absorb liquid, and you might have to add more water. That is, if you don't eat all the beans at one sitting. And along with the beans, if you drink a big glass of pineapple juice, then you can play Hawaiian music later that night.

Billy, Fixed this for Christmas dinner, What a great hit! This was absolutley delicious . Between 11 kinfolk not a whole lot left over.

Glad you liked them. They can be tweaked to suit your particular taste. This will feed several people. And they are good the next day.
