Here is the bill of material for the mexican cornbread.
1 cup white meal
1 cup milk
1 can cream style corn
1 teaspoon soda
1/2 teaspoon salt
1 small onion copped fine
1/4 cup oil (optional. The greese in the sausage is enough for us)
2 eggs
1/2 lb. grated cheese
1 lb. sausage, browned and drained (hot, medium, or mild. Your choice)
sliced jalapeno peppers to taste
Mix all ingredients together, put into a 9X13 pan, bake at 325 deg. for 45 min. or until brown.

This is really good stuff Billy, my wife makes this dish on occasions.
I reccomend this recipe for all to try.

I can make a meal off just the cornbread. My wife cooked a pot of the beans after I posted the recipe. I have eat on them for 2 days now, plus gave a mess away for a friend to try. Still have beans in the fridge. Not to worry, I will get around to eating them all. She will make gumbo, which she doesn't like, and I will eat on it for a week. I don't get burned out on it. If she will cook and put stuff on the table, I will eat it.
