Chocolate Chiffon Pudding
1 T unflavored gelatin 1/4 c unsweetened cocoa 4 T sugar 1/8 t salt 2 large eggs, separated 2 c milk 1 1/2 t vanilla
In a saucepan, mix together gelatin, cocoa, 2 T sugar and the salt. Beat together the egg yolks and milk; stir that into the gelatin. Put over very low heat, stirring constantly, until gelatin dissolves and the mix thickens slightly. Take off the stove and stir in the vanilla. Chill. Beat the egg whites until they make soft peaks; gradually add the remaining 2 T of sugar and beat until stiff. Fold the gelatin mixture into the beaten egg whites then serve.
