Cutting open some spuds from this falls harvest we are finding the centers to have some issues. Can anyone help with whats going on here? Can we work around these and still cook with them?

Thats normal!!!--LOL!!Its called hollow heart---just trim out the dark spots and use spuds as you normally do!---When the growing conditions fluctuate as much as they did this year you will find some of it in the bigger ones!--some folks plant closer to control tato size and get around this condition, but I just givem room to grow nice big spuds and trim them IF the spots are present!
They dont all have the condition and some kinds dont have it at all!---Spuds need a pretty steady water/hot/dry enviroment to grow slow but steady!

This will tell a little about it and causes. Looks as if picking imature and lack of sufficient calcium are two causes.
Doesn't say about being dangerous.

None of these mention harmful and I remember cutting spots out and cooking and eating potatoes with spots. It hasn't affected me much, affected me much, affected me much nor did it affect me much!
