Sorry... I had to bump this post to the top again. The weather turned cold a couple of weeks ago, and we got the hankering for some soup. Too late in the day to make my signature Chicken Noodle Soup because it takes too long to make the broth. Well, I remembered that John had posted this recipe for Potato soup on the forum a while back and I just had to try it.

Boy oh BOY is this a great soup... I recommend it to anyone who wants a quick warm soup to warm the cockels of your heart on a cool day. AWESOME!

Thanks for posting this, John!

I did a batch on Sunday, my wife is out of town and I like to cook enough for a couple of meals. The grocery store only had the Jimmy Dean hot sausage, but it added a little flavor and the soup was gone in two days.

I am going to have to try it. I never really liked potato soup. It was always what we had when mom and dad ran out of paycheck before they ran out of week. The one thing we always had was plenty of potatoes from the garden. Mom's was simply just potatoes, milk and a little butter. I guess it always made me feel poor. Bonnie likes it and I will fix it for her. However, I won't eat it.
