Remove the pump and cover the access hole with a plate. Don't run it without hyd oil in the system. Why not put the engine back in the tractor?

it can be run for short periods of time with the pump connected. Just squirt some oil in the inlet of the pump . I have done it many times. The pump keeps a little oil inside because it cant pump out without oil to replace. Dont forget to prime the engine oil pump before start up.

Prime the oil pump like Clark mentioned, but also retorque the cylinder head bolts after a few hours of engine run time - 45 lbs.
While you have it broken down, check the oil level on the fan assembly.

I would wait it out until the paint job is complete. Given the coolant and oil block off plate, it's probably not worth the effort just to hear it run. Just think of the bitter sweet moment of hearing it run and looking good at the same time.
