clutch removal

What is the best way to hold the flywheel from turning when removing the clutch?

I use a big ol' screwdriver between the ring gear teeth and the starter cutout. Not saying its the best method, but it works for me and (touch wood) I haven't damaged the teeth yet.

I do note some wear of the flywheel teeth where they engage the starter. At what point does the flywheel need to be replaced? This wear appears minimal.

Impact wrench. You won't need to hold the flywheel.
