Emilie’s Plum Flan

Bottom Layer


4 cups flour

Mix together:

1 package dry yeast
1 teaspoon sugar
1/2 cup milk (warmed to 105 - 115 °F)
Let mixture stand 10 minutes.

Make well in flour. Add yeast mixture and the following ingredients:

1/2 cup milk
1/2 cup oil
1 egg
1/2 cup sugar

Mix ingredients and let stand in warm place 20 minutes. Butter and flour either an 9" x 13" or a 12" x 15" pan. Roll out dough size of baking pan - transfer to pan and prick the surface all over with a fork.

Plum Layer

1/2 cup bread crumbs
Lots of plums
1/2 cup chopped almonds

Sprinkle the surface with 1/2 cup bread crumbs then arrange the plums, washed, drained & pitted and halved very close to each other to cover entire surface. Arrange plum halves standing up all facing the same direction.

Sprinkle top of flan with 1/2 cup of chopped almonds.

Cook at 350 °F for 30 minutes. Allow to cool, cut and sprinkle individual pieces with the allspice/sugar topping.


Allspice/Sugar Topping

1/2 cup sugar
1 teaspoon allspice

This is a family favorite every year when we harvest the plums. And guess what...the more plums, the better. :D :D
