Zucchini Cake. Source of recipe unknown.
2 1/2 cups whole wheat flour
1 tsp baking powder
2 tsp baking soda
3 tsp cinnamon
1 tsp sea salt
1 cup chopped walnuts
3 large eggs
1 cup vegetable oil
1 cup honey
2 tsp vanilla
2 cups grated unpared zucchini - not packed down
On wax paper stir together well, the whole wheat flour, baking powder, baking soda, sea salt and cinnamon.
In a large bowl beat together until blended the eggs, vegetable oil, honey and vanilla. Stir in the zucchini. Gradually stir in the flour mixture, keeping smooth. Stir in the walnuts. Pour into an oiled and floured 12-cup fluted tube pan
Bake in preheated 350 deg oven 55 - 60 minutes.

This recipe sounds like it's an old family recipe. Do you know it's source? Does it come from a friend or family member?
I might be wrong but the " On wax paper stir together well, the whole wheat flour, baking powder, baking soda, sea salt and cinnamon" reminds me of the old way of doing things. I love it.
