I just got a 1963 140. In pretty good shape overall .
2 problems:
1. I put in a new alternator and a new battery. Voltage coming out is strong (mentioning because the battery keeps discharging also).
2. Its starts up but keeps stalling out within a few minutes. Fuel is fine.
Please let me know if this post is missing any important information.
Any pointers as to where I should start looking?

What does "fuel is fine" mean?
Just a guess, but seems to me you have a fuel flow problem!
Maybe dirt in the tank outlet (shine a light in the tank and look), dirty fuel filter screen in the glass fuel bowl, maybe some dirt in the screen that is on the inlet side of the carburetor, or maybe some dirt in the fuel bowl of the carb.
Possible your carb float is stuck, or maybe some dirt above the seat of the needle and seat hooked to the float!

it came with a generator so you converted to alternator it sounds like ? should be putting out between 13.5 to almost 15 volts if charging correctly

Does your alternator have a switch to keep power from going to it when the tractor is off? If not, it will drain your battery.
The cutting off after a few minutes sounds like a fuel problem, it runs what is in the carb then cuts off until it fills again it sounds like.
