What is the best way to get some of the grime off, smooth out some age and shine up (and protect) the share and moldboard on a plow?

Plow with it for a little bit, won't take much and it'll be as shiny as new then you can smear some grease on it.

Other than plowing which is funnest and easiest, I used a wire wheel on a grinder before. Shined it up good. Then I used burnt motor oil or grease to protect it. I have now started using the cheapest black spray paint i can find. Cleans off quick when plowing and not near as messy

After I plow I hit the shined up areas with gray rattle can primer. It's not durable so wears off fast in the soil, protects the metal and won't get on things once dry - which is just a few minutes.
