This evening on the Chat, folks were looking for a good crock-pot dish... This is GREAT and if done right, it is low fat and low in calories. For those doing Weight Watchers, a 1/2 cup serving of this chili is 1 point!!!
48 ounces great northern beans in jar, drained and lightly rinsed.
3 chicken breasts (no skin, no bone) uncooked.
2 cups chicken broth (I prefer low fat and low salt...it just tastes better)
2 cups salsa, thick and chunky (heat to whatever your preference)
1 cup Mozarella Cheese (part skim, grated). (I USE CHEDDAR, but I am from Wisconsin!!!)
Cube chicken into one inch or smaller cubes.
Place all ingredients in crock-pot.
Cook over low heat for 5-7 hours, stirring occasionally.
Add cheese the last half hour and stir.
Serve and ENJOY!

After chatting about it last night in the chat, I made up a batch of this chili today myself. We used fresh salsa (Old Home Brand) and chose a medium salsa. Ours was zingy, but I would have liked a little more zing...I would use the HOT salsa next time I make it. It gets diluted pretty well and is not overly hot.

When it gets a little colder around here we're going to try the white chili. Thanks for the WW points value on it, too. I had my wife's attention when I told her the points value! And we (well, mainly me) add different seasonings to the WW recipes, as most are written to accommodate all tastes.
