...and, biggest of all, don't do it inside! If you're going to have an out of control raging oil fire, better to be out in the driveway than in your garage.

Jeff is correct, the number 1 thing is to be sure there is no ice or excess moisture in your bird before lowering it into the oil. I'll pass along one other tip if you are dead set on frying a turkey. We have done this for the past several years, works unbelievably well. Place your bird on the wire support, fully inoculated , rubbed, etc. Then lower bird into an "old fashioned" brown paper bag, like grocery stores used to send home. Tie the bag up around the neck of the wire support rod. Lower the whole affair into the oil. What is the benefit? Two things I have noted:
1 - the oil outside the bad stays perfectly calm and still, while you can hear all the frying noises inside the bag. This means less chance of oil splashing out of the pot and starting a fire.
2 - when you remove the turkey, still in the bag, all the little burnt particles, spices, etc. stay in the bag while the oil drains through. This leaves the oil very clean fo r a second use later on.
Some will say it sounds crazy, like I first did, but this works extremely well!

I recommend that you test the oil level in the fryer before it is heated up by lowering the turkey into the pot. To make sure the oil level will not overflow the top of the fryer.
Cook only thawed or fresh turkeys in a Deep fryer. Frozen turkeys cooked in a deep fryer are a recipe for disaster
