Hey folks some of you may have had this before, I hadn't and it's extremely good . With fresh squash coming in, you need to try!
6 to 8 squash cut into pieces
1 medium onion, chopped
Salt (to taste)
Pepper (to taste)
Par boil squash and onion until tender, but not a mush
Add 1/4th stick of margarine to squash and onion and cream with potato masher along with 1 egg
Add enough corn meal to make into patties (like salmon patties)
In a large skillet add enough oil to coat bottom well
Drop in squash/onion patties and fry until golden brown on each side
Delicious with fresh vegetables and replaces cornbread!

Fried squash and onion patties
My wife makes the same dish except she doesn't put in margarine and uses Mexican cornbred mix instead of plain meal. It gives just a little different taste. But you are right, it is goooood.

We gathered enough squash just now, and I showed her your receipe, and she is going to make some for supper tonight, and put margarine in it, and see what happens.

Billy, hope you like it. That is the tame recipe because I didn't know if anyone likes hot seasoning as much as I do. I sometimes use the packets of jalapeno pepper cornbread mix from the grocery store and cut up a little more pepper in it, but some people don't like it as hot as I do.
Hope your garden is doing well. Ours isn't doing anything at all. NO rain since April 7 and we are in an extreme drought condition here and ALL outdoor watering is banned. Hope you enjoy the squash and onion patties! Pete

Pete,
Tried your receipe last night and it was good. Like you, I prefer the hotter seasoning. I wouldn't back up from either one though. Our garden is starting to come in now. Already pulled the onions and the pinto beans are through. Had the garden cultivated and real clean, and the rain came, and now my peas have grass as high as they are. Will pick some cream peas today when the grass drys a little. I have seen where the southeast is in a drought condition. Maybe some clouds will blow in from the gulf and you will start getting a little rain. May be too late though.

Kodiak, glad you liked the patties! I can tell you one thing about them, they are addictive . A friend gave me the receipe a while back and I can't seem to be able to make enough of them. Barbara and I both love them and I have been experimenting with doctoring them up in different ways and haven't found any way that we don't like them yet!
